                      Greek Style Cold Cooked Greens

  1 1/2         pounds  leafy greens -- 1 to 2 pounds, such as spinach, dandelions, chard, beet, mustard, etc.
  2        Tablespoons  olive oil -- or as needed
                        salt & freshly ground pepper
  2                     lemons -- cut in half
 
 
Parboil the greens in salted water until tender, just a minute or two for
spinach, somewhat longer for tougher greens, drain well and cool them
quickly by running them under cold water. Squeeze them dry and chop;
sprinkle with olive oil, salt, and pepper, and serve with lemons halves.
 
Makes 4 servings
Time: 20 minutes
