4 large ripe tomatoes -- chopped
4 green chilies -- (such as serrano chilis)
10 green onions -- chopped
1 1/2 cup minced fresh cilantro
4 Tablespoons olive oil
4 Tablespoons lemon juice -- (optional)
Salt -- to taste
Remove the stems and seeds, then mince the green chilis.
In a bowl, combine the green chilis, cilantro with all the other
ingredients.
If you like, you can also saute the onions in the olive oil, then add all the other ingredients and let cook at low heat for about 5 to 10 minutes.
Serve 4 to 6

ChupaNote: this was a little more wet than I prefer. Start with 2 T. each olive oil & lemon juice, and work your way up to a moistness you like.
