Garlic Mushroom Bisque

20 ounces button mushroom -- trimmed
1/2 large onion -- quartered
3 garlic cloves -- unpeeled
4 sprigs fresh rosemary
3 tablespoons extra virgin olive oil
salt & freshly ground pepper
4 cups vegetable broth
1 small potato -- peeled and diced
1/4 cup hazelnuts
Preheat oven to 450F degrees.
Place mushrooms, onion, garlic and rosemary on baking sheet. Drizzle with oil; season with salt and pepper; toss and spread out in a single layer. Roast, tossing occasionally, about 25 minutes; squeeze the garlic cloves from their skins.
Add garlic and all other vegetables to a pot and add broth and bring to a boil. Reduce heat to medium and simmer about 15 minutes; discard rosemary.
Working in batches, transfer soup to blender (or use an immersion blender) and puree; return to pot; reheat.
Top with roasted hazelnuts.
Serves 6-8 as a starter
