   1           teaspoon  cornstarch
      3/4           cup  coconut milk
   1         tablespoon  vegetable oil
   1         tablespoon  fresh ginger root -- chopped
   1                     shallot
      1/3           cup  cream -- 15%
      1/2      teaspoon  curry powder
                         salt
 
 Mix the cornstarch in the coconut milk.
 
 Heat the oil in a small saucepan, and add the ginger and shallot. Saute for 30 seconds, and add the coconut milk and the cream.
 
 Add the curry, bring to a boil, reduce the heat and simmer for 5 minutes. Season with salt to taste.
 
 Serves 4 (about one-quarter cup per serving)
 Prep time: 15 minutes
