Tomato Strawberry Freeze - 15g Carbs, 2g Fiber

[I love this... made it while the garden tomatoes were abundant.
I used Splenda instead of sugar and Almond Milk instead of regular.
This is a very refreshing "Ice Cream" that is soothing for the

Like most VitaMix recipes, this one is healthy. Low in fat, high in
fiber, potassium and vitamin C, this homemade tomato strawberry ice
cream is sure to become one of your favorite Vita Mix recipes.

Health Classification: Diabetic Friendly, Low Fat, Low Sodium,
Low Cholesterol, Heart Healthy, Gluten-Free, Vegetarian, Raw

Meal Type: 5 Ingredients or less, Desserts/Toppings
Yield: 4 cups (960 ml)
Processing Time: 30 to 60 seconds
Speed: Variable to High
Prep Time: 10 min
Total Time: 10 min

1 cup (180 g) chopped plum tomatoes
1/4 cup (60 ml) skim, 1% or 2% milk
1/3 cup (67 g) sugar or other sweetener
1 lb (454 g) frozen unsweetened strawberries

1. Place all ingredients into the VitaMix container in the order
listed and secure lid.

2. Select Variable 1.

3. Turn machine on and quickly increase speed to Variable 10, then
to High.

4. Use the tamper to press ingredients into the blades.

5. In about 30-60 seconds, the sound of the motor will change and
four mounds should form.

6. Stop machine. Do not overmix or melting will occur. Serve immediately.


Note:
If mixture has the consistency of a milkshake, firm it up by quickly
adding a cup of frozen ice cubes. Process until smooth.

Variation: For a non-dairy alternative, substitute soy milk for
skim milk.

"I made this with low-fat rice milk because of a friend's lactose
intolerance (but an added benefit is that it reduced calories, fat
and removed cholesterol). Not a bad recipe at all. I thought, hmmm...
tomato strawberry, huh? Tomatoes don't show up in the flavor but it's
a good way to add to the bulk without adding too many calories. I made
this with strawberries as shown but it's good with mixed berries or blackberries as well (tried all three ways). :)"
