Herbed Cheese Boursin-Style

3 ounces low-fat cream cheese -- at room temperature
1/3 cup dry-curd low fat cottage cheese
1 garlic clove -- to 2, minced
3 tablespoons chopped fresh herbs -- including tarragon, basil, parsley, chives or scallion greens, chervil and/or dill (try to use at least 3 different herbs)
2 drops lemon juice
salt and freshly ground black pepper
Place the cream cheese, cottage cheese, and garlic in a food processor and
puree until smooth. You'll need to scrape down the sides of the processor
bowl with a spatula several times. Transfer the mixture to a bowl and stir
in the herbs, lemon juice, and salt and pepper to taste.
Serves 4 to 8.
