1 package ladyfingers -- (3 ounces)
2 tablespoons coffee liqueur
2 tablespoons instant coffee
1 tablespoon hot water
1 1/2 cups light cream
1 package instant vanilla pudding & pie filling mix -- (4-serving size)
1/2 teaspoon cinnamon
1 container frozen whipped topping -- (8 ounces) thawed
Vegetable cooking spray
To garnish: -- Additional whipped topping; Cinnamon sticks for garnish
Lightly spray 9-inch pie plate with vegetable cooking spray. Line bottom and side with ladyfinger halves, split sides up. Brush with coffee liqueur; set aside. In large mixing bowl combine instant coffee and hot water. Stir until coffee is dissolved. Add cream, pudding mix and cinnamon, beating well. Refrigerate 5 minutes.
Fold in whipped topping. Spoon into ladyfinger crust. Cover and freeze
several hours or overnight. Garnish with additional whipped topping and cinnamon sticks just before serving.
8 to 10 servings
Chupa Note: instead of light cream, I used french vanilla soy creamer.
