Spinach with Olive Oil and Lemon - 5.2g Carbs, 2g Fiber, 1.8g Sugars

12 oz baby spinach
1 Tbsp grass-fed butter
1 Tbsp garlic, minced
2 1/2 Tbsp lemon juice
Salt and pepper

Boil a pot of water. Add spinach and cook for one minute. Remove, wring and drain. Add butter, garlic and juice and toss until butter melts. Add salt and pepper to taste.
