I highly recommend heirloom tomatoes as well as other heirloom vegetables and fruits... they are wonderful!!  Enjoy, GloriaCreamy Heirloom Tomato and Avocado Gazpacho - 15.2g Carbs, 6.5g Fiber, 1.2g SugarFrom: www.bloggingoverthyme.com/2014/08/15/creamy-heirloom-tomato-and-avocado-gazpacho/ - Loosely inspired by Joe Yonan's Eat Your Vegetables.Prep Time: 15 min Total Time: 15 min Yield: 4 First Course Servings OR 2 Main Course Servings1 lb heirloom tomatoes (various colors and varieties), cored and cut into large chunks1 small Persian cucumber, peeled and chopped (1/2 cup chopped cucumber)1 1/2 cups packed baby spinach leaves1 avocado, cored3/4 cup packed basil leaves1 1/2 garlic cloves, smashed2 tsp red wine vinegar2 tsp fresh lime juice2-3 dashes hot sauce (optional)4-5 small ice cubesPinch of sugarSaltPepperChopped tomato and cucumber, for garnishExtra virgin olive oil, for drizzlingPlace tomatoes, cucumber, spinach, avocado, basil, garlic, red wine vinegar, lime juice, hot sauce (if using), and ice cubes in the blender. Puree until smooth.Add the sugar, and season to taste with salt and pepper. Pulse to combine.Serve immediately (add additional ice and adjust seasoning if not cold enough), or chill in a covered container in the refrigerator.
