Kale Spinach and Prosciutto Side - 9.8g Carbs, 2.6g Fiber, 2.2g Sugar

Serves: 4
2 Tbsp olive oil
8 garlic cloves, minced
1/2 red onion, minced
1 bag baby spinach
1 bunch of kale, chopped
4 oz prosciutto (thinly sliced, chopped)
4 oz roasted red peppers, drained and chopped
Salt and pepper, to taste
Heat the oil over medium heat in a skillet.
Add garlic and onion. Lower the heat slightly and cook until the onions are translucent.
Add the kale with 1/8 cup of water. Turn the heat back up, stir and cover. Let kale wilt. Add spinach, prosciutto and red peppers. Stir well, add a couple of teaspoons of water and cover. Cook for about 15 minutes or until the spinach is wilted and the other ingredients are warm.
