Salmon with a Crunch - 8g Carbs, 3.4g Fiber, 1.6g Sugar

For those who love salmon, this is a dish that provides a bit of a crunch to complement the flaky and juicy salmon you're sure to enjoy. You can always serve on a salad or serve with Paleo tartar sauce for additional taste.
The following ingredient portions are meant to serve 2 people.
Approximate cooking time: 25 min
3/4 lb salmon fillet, skin on
1/2 cup almond meal
1/2 tsp ground coriander
1/2 tsp ground cumin
1 lemon, juiced
Freshly ground black pepper
Few sprigs fresh cilantro
Coconut oil
1. Preheat oven to 350 degrees F.
2. Mix the almond meal, coriander, and cumin in a bowl.
3.Lightly sprinkle or dab the salmon fillet(s) with lemon juice and season with pepper. Proceed to coat each fillet with the almond meal, coriander, and cumin mixture on both sides.
4. Grease broiler pan lightly with coconut oil and place salmon down on the pan with the skin facing down.
5. Bake salmon for approximately 12-15 minutes or until salmon flakes easily with a fork.
6. Sprinkle freshly chopped cilantro on fillet before serving.
