1 red onion -- (finely minced)
2 cups whole milk natural yogurt -- (drained overnight in the refrigerator through cheese cloth resting in a sieve in a bowl)
1 cup cilantro leaves
1 cup mint leaves
2 hot green chiles -- (roasted and cleaned)
1 lime -- (juice of)
1 garlic clove
2 tablespoons ground cumin
Combine the onion and yogurt in a large bowl and reserve.
Pulse the remaining ingredients in a food processor. Don't over-blend or liquidize.
Fold the 2 mixtures together and serve.
Makes 12 one-quarter cup servings
ChupaNote: serve as a dip with raw vegetables or pita chips, over baked potatoes, as an accompaniment to rice.
