What this dressing lacks in calories and fat it makes up for in big,
bold orange flavor and herbal oregano notes.

Makes: About 1 cup

1/2 tsp orange zest, freshly grated
1/2 cup orange juice, preferably freshly squeezed
1/4 cup cider vinegar
1 Tbsp extra-virgin olive oil
2 tsp fresh oregano, chopped OR 3/4 tsp dried
1 tsp Dijon mustard
1/2 tsp salt
1/2 tsp freshly ground pepper
1. Place all ingredients in a jar. Cover and shake to combine.
Make Ahead Tip: Cover and refrigerate for up to 1 week.
Makes: About 1 cup

This dressing was good until I added the oregano. The oregano was
overpowering and it doesn't seem to go well with the orange, at least
in this application.
I am going to try this again without oregano. Maybe some other herb
would be better.
FYI, I am not a picky eater and usually like oregano.
