Orange Balsamic Basil Marinated Salmon - 12.9g Carbs, 2.4g Fiber, 8.7g Sugar

[Editor's note: Alexandra's recipe presumes regular red balsamic vinegar, but if desired, you could use white balsamic vinegar without a major change to the end result.]

Cook Time: 6 - 8 min
Servings: 4

1 orange, cut into 1/4-inch round slices
Juice of 1 orange
8 garlic cloves, minced
2 Tbsp organic balsamic vinegar
1/4 cup chopped basil leaves
Organic coarse ground black pepper
1/4 tsp salt
46-oz salmon filets

Preheat the oven to 400 degrees F. Set aside the orange slices.
Whisk together the orange juice, garlic, balsamic vinegar, basil, salt and a sprinkling of black pepper in a large bowl.

Add the salmon, turn to coat, and let sit covered for 15 minutes. Remove the salmon from the marinade, shake off the extra, and place on to a baking dish. Bake for 6-8 minutes, until slightly pink in the middle. Serve accompanied by the orange slices.
