1/4 cup tahini -- (sesame butter)
1 teaspoon lemon juice
1 teaspoon vinegar
1 dash chili powder
1/4 teaspoon salt
Combine tahini, lemon juice, and vinegar in a medium bowl, mixing well. Add water, one tablespoon at a time, to thin the sauce until it reaches a syrup consistency, about 3 tablespoons. Stir in the chili powder and salt. Cover. Store in the refrigerator until needed.
Makes 8 tablespoons (8 one-tablespoon servings)
Author Note: tahini is a sesame paste made from pressing the oil from
sesame seeds. The attractive flowers of the tropical sesame plant produce sesame seeds as they dry up. These flowers yield about 1 tablespoon seeds per pod. Because sesame plants are grown in abundance in the American south, its cost remains relatively low.
Keep extra Tahini Sauce in the refrigerator. It is a nutritious tipping and sauce for many dishes.
