Baked Salmon Steaks with Cranberry Orange Glaze
1/3 cup tinned, jellied cranberry sauce
1 tsp. orange zest
2 tbsps. orange juice
1 tsp. brown sugar
1 tsp. red wine vinegar
4, 6 oz. salmon steaks
salt and pepper to taste
dill sprigs and orange slice for garnish
Preheat oven to 425 degrees. Place first 5 ingredients in a small pot and
bring to a simmer. Cook until jelly is melted and is well-combined with the
other ingredients. Place salmon in baking dish. Season with salt and pepper.
Spoon over glaze. Bake salmon 12 to 15 minutes, or until cooked through.
Divide among plates and spoon over pan juices. Garnish with dill sprigs and
orange slices.
Note: Salmon is high in protein and is a rich source of vitamin A, the
B-group of vitamins, and omega-3 oils.
