1/3 cup sugar
1 cup water
3 lemons
1 shot Tabasco sauce -- a splash, really
In a pot, boil sugar and water until sugar is dissolved. Remove strips of zest from 2 lemons. Add to syrup and let cool. When cool, remove zest. Squeeze 1/2 cup juice from lemons and add to syrup. Splash in Tabasco to taste. Loosely cover [in a metal pan] and freeze for four hours, stirring every 30 minutes or so. To serve, scrape with fork or spoon into a small dish or scraped lemon shell, forming wedge shape and freezing again briefly.
