Creamed Spinach

2 bags fresh baby spinach -- (12-ounce)
1 tablespoon light butter -- (stick butter)
1/3 cup finely chopped onion
2 teaspoons bottled minced garlic
1 tablespoon all-purpose flour
1/4 cup fat-free milk
1/2 cup tub-style light cream cheese -- softened
1/2 cup reduced-fat shredded white cheddar cheese -- (2 ounces) (such as Kraft Cracker Barrel)
1/4 teaspoon freshly ground black pepper
1/4 teaspoon hot sauce
1. Heat a large Dutch oven over medium-high heat; coat pan with cooking
spray. Add spinach; saute 5 minutes or until spinach wilts. Drain spinach
in a colander, pressing spinach with back of a spoon to remove as much
moisture as possible.
2. Melt butter in pan; saute onion and garlic over medium heat 3 minutes
or until tender. Add flour, and cook, stirring constantly, 1 minute. Add
milk and cheeses; cook, stirring constantly, 2 minutes or until cheese
melts. Add spinach; cook 3 minutes or until spinach is thoroughly heated.
Remove from heat; stir in pepper and hot sauce.
Yield: 4 servings (serving size: about 1/2 cup).
