                          Green Pea and Feta Dip

  1 3/4           cups  frozen petite green peas -- thawed
     3/4           cup  crumbled reduced-fat feta cheese -- (3 ounces)
  2        tablespoons  chopped fresh mint
  1              small  garlic clove
  1         tablespoon  water
  1         tablespoon  extra-virgin olive oil
  2          teaspoons  fresh lemon juice
     1/2      teaspoon  freshly ground black pepper

Place all the ingredients in a blender or food processor; process until
combined but not smooth.

Yields 12 servings 

Green peas add fiber, color, and a subtle sweetness to this hummus-like
dip. Serve with pita wedges or fresh-cut veggies, or use it as a spread
for sandwiches.
