Spinach and Tomato Chicken - 16.8g Carbs, 6.8g Fiber, 7.5g Sugar

1 (10 oz bag) baby spinach
2 Tbsp low sodium chicken broth
1 tsp olive oil
2 boneless, skinless chicken breasts
Sea salt, to taste
Pepper, to taste
Garlic powder, to taste
Italian seasoning, to taste
3 large tomatoes, yellow and red, cut into large chunks
1 bunch green onions, chopped
1/3 cup fresh parmesan cheese, grated

Heat oven to 350 degrees.

Place the spinach in the bottom of a 9 x 13 glass baking pan. Drizzle the spinach with chicken broth and olive oil and season with sea salt and pepper. Arrange the chicken over the spinach and season with sea salt, pepper, garlic powder and Italian seasoning. Top with the tomato, green onion and parmesan cheese.

Take a piece of aluminum foil and loosely tent it over the top of the pan. Do not seal the edges of the foil to the pan. Bake for 15 minutes, remove the foil and continue to bake for another 20 minutes, or until the chicken is cooked through. Serve immediately. Enjoy!
