Moroccan 7-Day Preserved Lemons

2 ripe lemons -- scrubbed and dried
1/3 cup coarse sea salt
1/2 cup fresh lemon juice
Here's a quick 7-day method for preserving lemons: scrub 2 ripe lemons and dry well. Cut each into 8 wedges. Toss with 1/3 cup coarse sea salt and place in half-pint glass jar with a glass or plastic-coated lid. Pour in 1/3 cup fresh lemon juice. Close the jar tightly and let the lemons ripen at room temperature for 7 days, shaking the jar each day to distribute the salt and juice.
To store longer, add oil to cover and refrigerate.
Serves 8 (2 wedges each)
