Grilled Chipotle Onion Rings - 7g Carbs, 1g Fiber

A Delicious Grilled Side Dish
Fried dishes, like onion rings, are off-limits on the South Beach
Diet, but there is a healthier and even more delicious swap you can
make. Enjoy the grilled onion recipe below with a turkey burger or
chicken kebab.
Try red, yellow, or sweet onions (such as Vidalia) or a mix of
all three to make these sweet and spicy onion rings. When cooking
on an outdoor grill, use a grill topper or a vegetable basket so
the onions don't slip through the grate.
Prep time: 10 minutes
Cook time: 12 minutes
Servings: 4
2 medium onions, cut into 1/2" thick rounds
1/4 tsp salt
1/8 tsp freshly ground black pepper
2 canned chipotle chiles in adobo, rinsed, seeded, and minced
2 tsp fresh lime juice
Lightly coat a grill or grill pan with cooking spray and heat to
medium-high.
In a medium bowl, toss onions with salt and pepper (rings can
separate). Grill onions, turning occasionally, until lightly
browned, 10 to 12 minutes. Return onions to bowl, add chiles
and lime juice, and toss until the onions are well coated. Serve warm.
