I have a question on potato skins. Obviously a whole potato is just
loaded with carbs, more carbs than most of us on the list want to deal
with. But I've wondered about the skins. I've always heard that the
skin is the most nutritious part of the potato. Is that true?
Once hollowed out, a potato skin can be filled with just about any
ingredient - veggies, meats, cheeses. So I'm curious to know what the
nutritional facts are on potato skins and if they're good for a diabetic
recipe, what are some good ways to prepare them?
