Zucchini Hummus - 7g Carbs, 3g Fiber, 0.9g Sugars

This hummus replaces traditional chickpeas with zucchini for a low-carb take on the favorite dip. Tahini and olive oil make this hummus smooth and creamy.
Servings: 12
1/2 cup raw sesame seeds
2 medium zucchini, roughly chopped
1 cup raw tahini
4 Tbsp extra virgin olive oil
1/2 cup fresh lemon juice
1 1/2 tsp salt
1. Place sesame seeds in a bowl and cover completely with warm. Allow to soak for 4 hours.
2. Strain seeds from liquid.
3. Place sesame seeds, zucchini, tahini, olive oil, lemon juice and salt in food processor and pulse until smooth.
4. Serve with zucchini chips or homemade crackers. (Not included for nutrition!)
