Chef's Note: Soba noodles are Japanese noodles made from buckwheat flour. They are thin, somewhat like linguine, which can be substituted.
Author Note: This slightly spicy orange sauce in this dish is one of my favorites. You can serve it with any greens you like or have on hand, but collard greens are favorite to use here. Broccoli florets may also be substituted. For a complete meal, serve over or tossed with soba noodles.
