Green Goddess Cucumber Dip – 38.5g Carbs, 18.1g Fiber, 8.9g Sugar

GREEN GODDESS CUCUMBER SPREAD (but make those crackers gluten-free or raw dehydrated.
This refreshing dip highlights the bright flavors of spring. Use it as a condiment for assorted vegetables or thin it with water for a quick salad dressing.
Makes: 2 cups

1 avocado, diced
1 lemon, zest and juice
1 clove garlic, minced
1 seedless cucumber, chopped
1/2 cup raw spinach
1 green onion, chopped

Combine all ingredients in a food processor and puree until smooth.

For a salad dressing, puree with 1/2 – 3/4 cup water to reach desired consistency.
