We made this with ground turkey. I replaced the paprika with Aleppo red pepper. It was delicious.

Homemade Breakfast Sausage Patties

1 pound lean ground pork
1 shallot -- grated
1 garlic clove -- grated
2 teaspoons ground sage
1 teaspoon crushed red pepper flakes
1 teaspoon light brown sugar
1/2 teaspoon paprika
1/2 teaspoon fennel seed
1/4 teaspoon ground rosemary
1/4 teaspoon white pepper
1/4 teaspoon ground mustard
1/4 teaspoon kosher salt
1/8 teaspoon allspice
1/8 teaspoon cloves
Place all the ingredients in a medium bowl. Stir to thoroughly combine all
ingredients. Cover and refrigerate overnight.
Measure out 1/4 cup of the mixture, form into a flat patty. Repeat until
the mixture is gone.
Cook into a nonstick skillet over medium hewat until brown on all sides
and fully cooked.
Serves 6
