Southwestern Marinated Chicken - 1.5g Carbs, 0g Fiber
1 1/2 lb. boneless, skinless chicken breasts
1/4 cup fresh lime juice
2 Tbsp olive oil
2 Tbsp orange juice
2 garlic cloves, minced
1 Tbsp fresh, chopped cilantro
1/8 to 1/4 tsp. cayenne pepper (more or less to taste)
1/4 tsp. ground cumin
1/4 tsp. salt
Place chicken breasts in a glass baking dish. Place other ingredients in a small bowl and whisk to combine. Pour marinade over chicken. Cover and refrigerate for 20 minutes to one hour. Remove from marinade and grill or broil for 3 to 6 minutes per side, or until chicken is no longer pink in the middle. Baste with leftover marinade during cooking if desired.
