Easy Southwestern Pork Stew - 6g Carbs, 1g Fiber, 5g Usable Carbs

1 medium onion, chopped
3 cloves garlic, crushed
2 lb boneless pork loin, cut into 1" cubes
2 tsp ground cumin
1 Tbsp dried oregano
1/2 tsp salt
1 can black soy beans
14 oz canned tomatoes with green chiles
1 cup chicken broth
1 tsp chicken bouillon concentrate
Put onions and garlic in slow cooker, with pork on top. Stir
together seasonings, soy beans, tomatoes, broth, and bouillon
concentrate, and pour over meat and vegetables.
Cover and cook on low for 8-9 hours.
Servings: 6
