1/2 pound ripe tomatoes -- peeled, seeded, very finely chopped
1 green bell pepper -- peeled (optional) and seeded and very finely chopped
1/2 small cucumber -- peeled, seeded, very finely chopped
2 spring onions -- wilted leaves removed, and very finely chopped
1/4 teaspoon dried mint
1/2 teaspoon hot paprika
1/2 teaspoon freshly ground black pepper
salt -- to taste
2 teaspoons white wine vinegar
1 tablespoon extra-virgin olive oil
In a medium-size bowl, toss all the ingredients together and serve at room temperature.
Makes 4 servings
AuthorNote: This preparation is called 'ezme salatasi', and is excellent as an accompaniment to grilled food, although I was first introduced to it as a meze. In this recipe, "very finely chopped" means about the size of this "O". I've tried this in a food processor, but even pulsing doesn't work; it just makes it too liquidy and mushy. You've got to do this by hand for a perfect result.
