Turkish Smooth Feta Cheese Dip with Spices - Beyaz Peynir Ezmesi

1 pound feta cheese -- Greek, Bulgarian or Turkish
4 large garlic cloves -- finely chopped
2 teaspoons Hungarian paprika -- sweet or hot, to taste
2 teaspoons Aleppo red pepper flakes
3 tablespoons extra-virgin olive oil
2 teaspoons dried mint
2 medium ripe tomatoes -- sliced
To garnish: -- imported green and black olive
Break the feta cheese into chunks and soak in warm water for 30 minutes,
changing the water every 5 to 10 minutes. This will reduce the saltiness
of the final preparation. Drain the cheese and crumble further.
Place the feta cheese, garlic, paprika, red Aleppo pepper, and olive oil
in a food processor and pulse until smooth. Transfer to a smooth bowl,
cover, and refrigerate for at least 20 minutes.
Serve the cheese at room temperature, drizzled with olive oil, sprinkled
with dried mint, and garnished with the sliced tomatoes and olives. Spread
on some flatbread to eat.

Sultan's Kitchen in Boston. This kind of spicy feta cheese dip is also
popular in Greece, where htipiti me piperia is made with fresh chiles and
feta cheese blended smooth.
