It's time for the ultimate appetizer for any occasion! This artichoke guacamole has a 3 way green factor with artichoke hearts, avocado and salsa verde. 3 greens and 3 amazing flavors that come together perfectly. I love how this recipe really utilized the whole artichoke. The hearts bring tons of great flavor to the dip and you can also use the leaves to scoop it up too!
8 cooked, large Ocean Mist Artichokes
1 lime or lemon
½ ripe avocado
1/4 cup favorite salsa verde
2 cloves fresh garlic, minced
Salt and pepper, to taste
1. Start with 8 cooked, large Ocean Mist artichokes. Remove the hearts and bottoms from the artichokes and place in a medium-sized bowl. Mash artichoke hearts and bottoms with fork until smooth or place in a food processor. Add the juice from 1 lime or lemon, avocado, garlic and blend to combine.
2. Add the ¼ cup of your favorite salsa verde. Blend all the ingredients together and season with salt and pepper to taste. Serve with artichoke leaves, your favorite whole grain snack cracker or tortilla chips!
