4 medium cucumbers, peeled and diced

1 8 oz low fat kefir

1 onion, chopped

2 cloves garlic, minced

1 Tbsp dried dill

1/2 tsp dried mint

1/2 tsp ground cumin

1/4 tsp cayenne pepper

Salt, to taste

Pepper, to taste

 

1. In a large bowl, mix all ingredients. Cover and refrigerate for an hour. Serve chilled.
