Almond Crusted Chicken Wings with Zesty Aioli - 2g Carbs, 1g Fiber, 0g Sugar

1/4 cup extra virgin olive oil
2 1/2 Tbsp sherry vinegar
1 tsp sea salt and freshly ground pepper
1/4 cup Coconut Mayonnaise (NOTE)
4 Tbsp lemon juice + 2 tsp lemon zest
1/2 cup coarsely chopped organic, raw almonds
3 tsp garlic cloves, crushed
36 chicken wings
3/4 tsp cayenne pepper
1 Tbsp sweet paprika
1 tsp ground cumin

Preheat the oven to 425 degrees F. In a large bowl, combine the olive
oil with the paprika, cumin, cayenne and garlic. Stir in the vinegar and
season with salt and pepper. Add the wings and almonds and toss.

Spread the wings and almonds on a large baking sheet in a single layer
and roast for about 25 minutes, until cooked through.

Meanwhile, in a mini food processor or Magic Bullet, combine the
mayonnaise with the lemon zest and juice; process until smooth. Season
the aioli with salt and pepper.

Turn on the broiler and broil the chicken wings, turning once until they
are lightly crisp, 2 to 3 minutes.

Transfer the wings and almonds to a platter and serve with the lemon aioli.

Makes: 36 wings (12 servings of 3 wings each)

NOTE: You can use regular mayonnaise if you like but you will have to
recalculate the nutrition facts.

polyunsaturated fats, 67 mg cholesterol, 104 mg sodium, 2 g
carbohydrate, 1 g fiber, 0 g sugars, 18 g protein
