The lemon in this recipe brings a fresh, brightness to the rice.
Serve this as a side to a main dish of tofu or vegetables.
Servings: 3
1 tsp black mustard seeds
1 tsp salt
2 Tbsp raw sunflower seeds OR raw cashews
1 tsp black sesame seeds
1/3 tsp turmeric
1/3 cup lemon juice
1 tsp lemon zest
3 Tbsp chopped fresh cilantro
2 cups cooked basmati rice
Toast black mustard seeds in a heated skillet over medium-low heat
with a lid (they will pop) for 2 minutes.
Add black mustard seeds, salt, sunflower seeds or cashews, sesame
seeds, turmeric, lemon juice and zest, and fresh coriander to cooked
rice and toss.
