The concern I have--speaking ONLY for myself--with the fatty foods you list is they've never been part of our diet until recently. Real meats aren't fatty or loaded with Omega 6 SFAs like con or "meats" found in our grocery stores (not to mention all of the chemicals and hormones). The meat from deer, elk or even range-fed bison have no resemblance to the marbled, fatty stuff found in our commercial stores.
More important is the ratio of omega-3 to omega-6. Both conventional and grass-fed beef provide acceptable 6:3 ratios, however grass-fed beef is closer to the ideal of a 1:1 ratio. Interestingly, diet has little effect on the proportion of omega-6 fatty acids, however the method of feeding did significantly alter the omega-3 content of fed beef.
I don't personally think the Omega 6 ratio is actually the issue here: I think a lot of our current problem has to do with eating too many of the oxidant kinds of foods, too little seafood, and a wheat/corn based diet (as opposed to rice/millet etc). Also the fact that what is sold as "beef" in a hamburger is a kind of weird chemical slurry created from old dairy cows. Too few vegetables. And eating all day long ...
