                        ITALIAN MARINATED TOMATOES

  4             medium  ripe tomatoes -- sliced
     1/4           cup  red wine vinegar
  3        tablespoons  water
  2        tablespoons  olive oil -- or canola
  1         tablespoon  fresh parsley -- chopped
  1           teaspoon  dried Italian seasoning
  1           teaspoon  onion -- grated
  1              clove  garlic -- minced
     1/4      teaspoon  fresh ground black pepper

1.  Arrange tomato slices in a large shallow container.  Combine remaining ingredients in a small bowl, stirring well.  Pour marinade over tomatoes; cover and chill 8 hours or overnight.
