2 garlic cloves, chopped
3 cups beef broth (low sodium, nonfat)
1/2 onion
2 cups sliced cabbage
1/2 cup beans (green)
1/2 tsp basil
1/2 cup sliced carrot
1 Tbsp tomato paste
1/2 tsp oregano
Salt and pepper, to taste
Grease a nonstick cooking pot and cook onion, garlic and carrot for 5 minutes.
Now cook cabbage, tomato paste, basil, beans, oregano, broth, salt and pepper for almost 10 minutes.
The zucchini can be cooked for another 5 minutes to make it tender. You can add or subtract different vegetables as per your taste. You can use green onion instead of yellow onion.
