Spicy Avocado Soup - 26.1g Carbs, 13.9g Fiber, 3.3g Sugar

Avocadoes are high in healthy fats which keep you full and help your body to absorb other nutrients. This recipe is very unique and full of flavor - the avocado and sour cream produces a smooth, creamy texture while the cayenne pepper gives it a little extra kick.
Serves: 4
Prep Time: 10 min
4 cup vegetable stock
1 small onion, diced
1 clove garlic, minced
4 avocados, ripe
1 cup sour cream
1 Tbsp fresh lime juice
1/2 tsp salt, if using
1/2 tsp cayenne pepper
Cilantro leaves
Combine the onion, garlic and vegetable broth in the slow cooker. Cover and cook on HIGH for 4 hours until the onion is tender.
Blend the avocado, sour cream, lime juice, salt and cayenne pepper in a blender then put into the slow cooker.
Cover and cook on LOW for 1 hour or on HIGH for 30 minutes until heated through.
Serve hot, garnished with fresh cilantro leaves and sour cream.
