Red Onion Jam - 16g Carbs, 1g Fiber

2 large red onions -- peeled, and chopped
2 Tablespoons butter
1/2 cup sugar
1/4 cup balsamic vinegar
1 Dash kosher salt
In a large skillet, saute onions in butter until soft.
Add sugar and cook for about 15 minutes until sugar is dissolved and
onions are caramelized.
Add balsamic vinegar and continue cooking another 15 minutes until jam is reduced and thick.
Sprinkle with salt to taste.
Cool completely before refrigerating.
Makes about 2 cups.
Author Note: Large red onions simmered and cooked down with butter, sugar and balsamic vinegar, makes an amazing relish or jam that's perfect for burgers, cheese, appetizers, tarts & galettes or dipping. Quick & Easy! Don't let this Red Onion Jam fool you. It's got a delicate sweet buttery taste like sweet onion relish, not hot or bitter. You're gonna love it! It's the perfect condiment!
Add a little dab of Red Onion Jam on crackers topped with artisan cheese. Use as a base for grilled pizza. Or as a base for a tomato galette or rustic zucchini tart.
Chupa Note: I haven't tried, but this looks like a good Slow
Cooker/Crockpot candidate.
