Greek Four Young Greens Saute - Horta

3 tablespoons extra-virgin olive oil
1 large garlic clove -- finely chopped
1/2 pound young spinach leaves -- washed well and dried
1/2 pound young mustard greens -- washed well and dried
1/2 pound young Swiss chard leaves -- washed well and dried
1/4 pound broccoli leaves -- washed well and dried
Salt & freshly ground pepper -- to taste

In a large skillet, heat the olive oil over medium-high heat with the
garlic. Add the greens and, once they wilt, season with salt and pepper,
and serve immediately.

Makes 4 servings, as a meze starter

AuthorNote: This very fresh, exciting dish is made with the young tender
leaves of four greens, and Swiss chard. I first had this horta in a little
village in Crete, south of Chania. There are lots of horta preparations,
the key being wild greens, although many horta are made with cultivated
greens. These are best found in farmer's markets, where they are likely to
be a little more tender than the kind found at the supermarket, on top of
which, you will not find broccoli leaves at a supermarket. If you have a
garden and are growing these plants, one way to assure that the leaves of
your greens are delicate and tender is to fertilize the earth with liquid
seaweed. This is a dish that should be eaten with at least two other meze
and a little warmed pita bread.

ChupaNote: in the off-season, or if you don't have access to farmer's
markets, Trader Joe's has a packaged young greens combination called
"Power Green" that are perfect for this dish.
