Pork And Lentil  Soup -  7g Carbs, 1g Fiber, 2g Sugar

1 1/2 lb pork shanks
2 cups lentils 
10 to 12 cups water 
1 Tbsp salt 
1 Tbsp Worcestershire sauce 
6 peppercorns OR 1/4 tsp pepper 
1 onion, sliced OR 2 Tbsp instant minced onion 
1 cup sliced celery 
1 cup sliced carrots 

In a large saucepan (5 qt.) or Dutch oven, combine all ingredients, except celery and carrots.

Simmer, covered, 2 hours until meat is tender.

Remove peppercorns and pork shanks.

Cut meat from bone and fat; return meat to soup.
Add celery and carrots.

Continue simmering 1/2 hour until vegetables are tender.
