Lentil Salad - 19g Carbs, 3g Fiber, 2g Sugar

1 cup brown lentils
1 cup carrots, diced
1 cup red onion, diced
2 cloves garlic, minced
1 bay leaf
1/2 tsp dried thyme
2 Tbsp olive oil
2 tbsp lemon juice
1/2 cup celery, diced
1/4 cup fresh parsley, chopped
1 tsp salt
1/4 tsp pepper
In saucepan, combine lentils, carrots, onion, garlic, bay leaf and thyme. Add enough water to cover by at least 1 inch (2.5 cm). Bring to boil; reduce heat and simmer, uncovered, until lentils are tender but not mushy, 15 to 20 minutes. Drain and remove bay leaf. Add oil, lemon juice, celery, parsley, salt and pepper. Toss to mix.
