2 lb chicken breast, cut into bite-sized pieces
2 onions, chopped
2 sweet peppers, any color, chopped
3 garlic cloves, minced
1 parsnip, chopped
1 33.5 oz carton tomato sauce (no salt added)
1/4 cup unsalted chicken broth
2 Tbsp chili powder
1 tsp unsweetened cocoa powder
1 tsp reduced sodium Worcestershire sauce
1 Tbsp garlic powder
1/3 tsp bottled hot pepper sauce (optional)
4 cups hot cooked brown rice or pearled barley (brown rice used for nutrition)
Add all ingredients except rice to crockpot. Cover and cook on low six to eight hours, or high four hours. Serve over cooked brown rice or barley.
