Vegetarian Baked Beans - 36g Carbs, 9g Fiber, 9g Sugar

You can make these baked beans with pinto beans if you prefer them over navy beans.
Prep Time: 15 min
Serves: 6
Serving Size: 1/2 cup beans

Cooking spray
1 large onion, diced
2 (14.5-oz) cans navy beans, rinsed and drained
1 cup gluten-free vegetable broth
1/ 4 cup no salt added ketchup
1/4 cup Splenda Brown Sugar Blend
1 Tbsp gluten-free lower sodium soy sauce
1 Tbsp Dijon Mustard
1 Tbsp garlic powder

Preheat the oven to 350 degrees F. Coat an 8-inch baking pan with cooking spray. Set aside.

Mix all the ingredients in a large bowl. Pour into prepared baking pan. Cover and bake for 45 minutes. Uncover and bake an additional 30 to 40 minutes or until thickened.

MAKE IT GLUTEN-FREE: Be sure all ingredients you are using are gluten-free and this dish can be gluten-free.
