1 pound chickpeas
1 medium onion
1 cup chopped parsley
1 cup chopped cilantro
1 tablespoon ground coriander
1 tablespoon cumin
1/2 teaspoon black pepper
1 tablespoon baking powder

Soak the beans in cold water for 24 hours. Mix all the ingredients except the baking powder. Grind the mixture in a food processor until it turns to a thick paste. Add the baking powder and let the mixture set for 30 minutes, then shape into patties.

Traditionally, falafel are deep-fried in olive oil, but I broil them in the oven, which drastically cuts the number of calories. I must admit, however, that they taste better when fried.

Yields 40 small patties.

Per serving: Calories 25; Fat <1g; Cholesterol 0; Fiber 0.9g; Sodium 20mg.

At parties, falafel is served on mini-pita loaves, with its condiments of chopped onion mixed with sumac, sliced tomatoes, pickled turnips, and tahini sauce.
