Curly Endive in Olive Oil - Hindbeh bel Zeyt

2 bunches curly endive -- chopped
1 large onion -- chopped
1 tablespoon olive oil
1 cup chopped cilantro
Bring a deep pot of water to a boil. Drop in the chopped endive and let it boil for 5 minutes. Drain in a colander and squeeze out all excess water.
Saute the onions in the oil until golden. Add the endive and cilantro and saute over low heat, for 10 minutes.
Yields 4 servings.
