Spicy Pepitas Dip - 5g Carbs, 1g Fiber
1 jalapeno chile, seeded, deveined
1/3 cup chopped onion
1/4 cup chopped cilantro
1 cup unsalted pepitas, roasted
1/2 teaspoon salt
1/4 teaspoon freshly-ground black pepper
3 tablespoons cream cheese
1/2 cup heavy cream
2 tablespoons lime juice
tortilla chips for serving
In a food processor, mix the chile, onion, cilantro, pepitas, salt, pepper, cream cheese, heavy cream and lime juice to make a thick, smooth paste. Taste; check seasonings. Serve with tortilla chips.
