Hildagonda's Blatjang - South African

2 fresh hot red chiles
2 medium onions -- peeled
2 1/2 tablespoons freshly squeezed lemon juice
2 tablespoons almond paste
1 tablespoon apricot jam
2 teaspoons dried apricots -- minced
3 small garlic cloves
2 bay leaves

Remove the seeds and membanes from the chiles and place them in the bowl of a food processor. Pulse until you have a thick paste. Peel the onions, prick them with a fork and cook them in the microwave on high power for 2 to 3 minutes. Quarter them and add along with the remaining ingredients to the bowl of the food processor. Pulse until you have a thick paste. Serve as a condiment with grilled [favorites] and Cape Malay dishes. Prepare this fresh each time, as it does not store well.

Makes about 1/2 cup.

"Hilda Duckitt was a very practical South African lady who was born in 1840 on a farm called Groote Post near Darling in the Cape region of South Africa. She was active in the social life of the Constancia area and began to collect the recipes of her native region while she was in her teens. One thousand copies of her cookbook were published in March 1891. The book, which is arranged in alphabetical order, is a presentation of Cape, Indian, and Malay dishes and preserves, and also includes a compendium of directions for polishing furniture and cleaning silk and a collection of homemade remedies for the sick. There were 28,000 copies in print by March 1914."
