Kale Cakes - 10g Carbs, 1g Fiber

Makes 12 cakes

1 Tbsp vegetable oil
1 onion, diced
4 cups packed chopped kale
2 cloves garlic
1/3 cup roasted red peppers
2 eggs, lightly beaten
1 tsp salt
1/2 tsp ground pepper
1 cup bread crumbs
Cooking spray

Heat the oil in a large skillet over medium heat. Saute the onion until soft. Add the kale and garlic and continue to cook until the kale wilts. Remove from the heat and let cool.

In a large bowl, combine the onion/kale/garlic mixture with the remaining ingredients and mix until well blended. Divide the mixture into 12 evenly portioned patties and coat them with bread crumbs.

Spray a nonstick pan with cooking spray and cook the patties over medium heat until lightly browned.

Flip and cook the other side until browned. You can also place them on a parchment-lined baking sheet or press them into nonstick muffin cups and bake for 20 minutes in a 350°F oven.
